The Easiest Meal You’ll Ever Make


“It’s late and you have nothing cooked.. but you are a genius who thought ahead and bought some salmon fillets. You are a DREAM you hear me?!”

That’s the conversation I have with myself at least once a week. If I’ve planned ahead and bought the ingredients to make something for dinner there no excuses to get deliveroo.

Why is this meal an awesome go to? Well, three reasons..

  1. It tastes phenomenal (and yes I’m a certified food snob - if it doesn’t taste good what’s the point!?)

  2. It ticks some boxes (macronutrient ones - I’m talking protein, carbs, fats - and greens).

  3. It doesn’t take hours to prep, cook and assemble.

If I’m working at night I’ve got about a 15 minute window from getting home to get some food in. What happens if I don’t? The hangry monster might be joining my boyfriend for dinner instead of me.

Full disclosure: this is a lazy gals dinner, if there’s a shortcut I’ll take it.

Here it is..

Baked Salmon with Broccolini & Rice (or noodles)

Step 1.

Get your salmon fillet out, rub some olive oil on it, or don’t - whatever you prefer. Here you can add some cumin, paprika or any other spices you like.. Or keep it super basic with just S+P.

Chuck it in a lined baking tray and into the oven at 180 degrees for 12-15 minutes.

*Girl, put a timer on you know what your attention span is like.

Step 2.

While your salmon is in the oven (and let's be honest.. your oven is still heating up because ain’t nobody got time for preheating) put the kettle on. Then grab a bunch of broccolini and chop the bunch in half.

Step 3.

At this point you’ve decided if you’re having rice or noodles right?

If you’ve got some leftover cooked rice - you beauty - get out a serving of that.

If not, you’re having noodles! I use Organic Soba Noodles because they take about 4ish minutes to cook, which is a-okay by me.

Step 4.

Now I wait a little, after about 8 minutes of scrolling the ‘gram or looking at funny dog videos I’m back in the game and ready to steam the crap out of some broccolini! (Not really, don’t go too hard on the steaming.. soggy broccolini is the absolute worst).

Pour some of the boiling water from the kettle in the saucepan, steamer goes on top with broccolini inside. Gal there is hope yet, you are a cooking kween.

Step 5.

Here you can either get another saucepan out to cook your noodles OR jump into an unconventional idea I’ve got for you..

I get the steamer top off the saucepan.. I throw my noodles in the saucepan and pop the steamer back on top.

* Sometimes this upsets the harmony that was inside the steamer and the saucepan boils over..

Do NOT take your eyes off that saucepan for 4-5mins.

Step 6.

Timer is going off! It’s action stations my friend. Let’s do this.

  • Salmon - out of oven, rip off that skin and break it up with tongs in a bowl.

  • Noodles - out of saucepan into same bowl

  • Broccolini - out of steamer and into same bowl.

Step 7.

Final touches! Here’s where you can let your creativity floooww. I generally add olive oil at this point, if I’m going for an Italian vibe. If you’re feeling more of an Asian fusion you can add some soy sauce, even some chilli flakes for a little kick too.

Step 8.

Finito! There you have it, you are a masterchef.

Remember.. if it’s in a bowl you can eat it on the couch.. #winning.
